Cacciatore, Cake, and Cabo

In case you didn’t see yesterday’s post, Sunday was my one year wedding anniversary.

To celebrate, I made Chicken Cacciatore on Saturday night and served it with bruschetta and salad.

This bruschetta is so fresh and so simple to make.  Plus, it sort of makes me feel like I’m eating in a restaurant when we pair it with a meal.

Easy Bruschetta

Ingredients
6 or 7 ripe plum tomatoes
2 cloves garlic, minced
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
1 tablespoon chopped basil
Salt and freshly ground black pepper to taste
1 whole wheat baguette
1/4 cup olive oil

Preheat oven to 450 degrees. Cut the baguette into approximately one-inch thick slices.  Brush the reserved tablespoon of olive oil onto all of the slices and then place the slices oil side down onto a baking seat coated with cooking spray.  Chop up tomatoes, garlic, and basil and toss in a bowl with olive oil, vinegar, salt, and pepper.  Put in the refrigerator to chill.  Bake the bread slices for about 5-6 minutes or until crispy.  Remove from oven and allow to cool.  Top each bread slice with tomato mixture right before serving (if you do this too far in advance, the bread will get soggy).  Enjoy!

After dinner, we watched (or tried to watch) the movie Fair Game starring Sean Penn and Naomi Watts.  With a cast like that it had to be good, right?  Sadly, it didn’t hold our interest, and I fell asleep.  We stopped watching with about 40 minutes left to go.

And this is the top of the cake, which I hauled out from the freezer yesterday.

Earlier in the day, I told Michael that eating dried up freezer burned cake was the weirdest one year anniversary tradition.

But later in the day, I ate my words.

Old wedding cake is my new favorite food!  Who would have thunk it?

After some steak, wine, and stale cake, we had popcorn and watched How Do You Know. The movie was just so-so, but I seriously adore Reese Witherspoon.

Reese, if you’re reading this, will you please be my friend?

It was a wonderful anniversary weekend, but the celebration will be continued in July because…

  1. Greg was really creeped out by our year old wedding cake top, but I thought it tasted great. My mom did a great job packaging it for the freezer, so it really held up well. I definitely devoured that thing in a couple days when we got it out. Our wedding cake was chocolate, almond, raspberry flavored, and I LOVED it :)

    Michael kept telling me that I’d be pleasantly surprised, but I was like Greg and didn’t believe him. I truly was shocked at how good it was!

  2. We plan to eat our cake around our one year anniversary and are planning a trip to the Grand Canyon. We love to hike and haven’t done it in so long so I’m really excited for this trip in August. :) Happy Anniversary!

So glad your anniversary cake didn’t disappoint! =) We celebrated our 1 year anniversary where we got married (Austin) and stayed at the cutest little hotel in one of our favorite areas of town, South Congress! As for our cake, our cake lady became a great friend of ours, and she made us a fresh cake topper for our anniversary!! Mkay, your pics are making me want some cake…!

    A fresh cake topper? That is awesome!!!! Even though year old cake was good, it still doesn’t beat a new just baked one!
