I’m a firm believer that everyone needs a little glamour in their lives.
Some people get all dolled up and put on sparkly make-up. Other people drown themselves in diamonds and say things like, “Fabulous, dahling” (though thankfully, I don’t know anyone who does this).
I, however, get my glamour from salmon.
Yep. Dinner last night was Glamour Salmon thanks to my Trader Joe’s cookbook.
“Glamourous” isn’t necessarily the first word I’d use to describe salmon. However, as far as fish goes, I guess that salmon would be more glamorous than say, cod or sea bass.
Regardless of the name, dinner was very good. It was also glamorous.

1- 1 1/2 pounds of salmon fillets
1/3 cup honey
2 tablespoons soy sauce
juice of 1 lemon
1 tablespoon sesame oil
1/4 teaspoon chili pepper flakes
1/4 teaspoon ground pepper
Place fillets in a Ziploc bag. Combine remaining ingredients and pour into the bag. Place fish in the refrigerator for about an hour. Once fish is through marinating, preheat broiler and place fillets (skin side down) on a broiler pan. Cover with any leftover marinade and broil for about 5-7 minutes. Makes 4-6 servings.
This was really good served over rice with roasted broccoli. We also had side salads.
It was a simple, quick, healthy, and tasty Friday night meal.
I’m kind of obsessed with salmon, as I’ve declared multiple times before. I love anything that is full of antioxidants and promises to keep me young looking!
In fact, I taught a nutrition lesson to a class of 2nd graders yesterday and told them that if they eat lots of dark chocolate they will look like they are 7 years old forever. I’m sure their moms will just love me for that one!
What is your favorite type of fish? What are your favorite antioxidant rich foods? Aside from chocolate and salmon (but not chocolate-covered salmon), I love pumpkin and blueberries.
