Cranberry Walnut Bites
If you’ve looked here and here and here, it is clear that I have a thing for bite sized snacks. More specifically, I have a thing for bite sized snacks with nuts (a lifetime supply of Larabars goes to the person who can resist making a sick joke here).
Anyway, my newest bite sized creation contains walnuts, dried cranberries, and dates. And that’s about it.
Cranberry Walnut Bites
Ingredients (makes about 6)
1/3 cup walnuts
1/3 cup dried cranberries
8 pitted dates
Dash of cinnamon (optional)
Chop nuts in a food processor. Add cranberries and dates and pulse until all pieces are chopped and stick together. Form the mixture into tiny bite sized balls. Store in an airtight container for up to a week.
These are so sweet and delicious.
As good as they are right now, I’m really looking forward to making them in the fall/winter. They’d be so festive! And if you’ve looked here and here and here and here, you know that I like being festive.
What are your favorite healthy bite sized snacks? I’m also a fan of mini Larabars and mini Luna bars…even though they require more than one bite, unless you have an overly large mouth (no offense if you do). And I cannot resist a nice piece of dark chocolate or a chocolate covered strawberry.
I’m off to do some shopping today. I just might have to put a cranberry walnut bite or two in my purse for shopping fuel!

Do you use sweetened dried cranberries?
I used unsweetened since cranberries are so sweet naturally. Both would work though depending on your tastes.
I just organized my pantry last night and I have walnuts, dates, and cranberries! I see myself making these in the near future!
