Animal movies & homemade lightened mac ‘n cheese (giveaway winner)
Today is a big day for Lucy.
She goes to the vet for the first time since Michael and I got her. Luckily. she’s up-to-date on her shots, so I don’t think she’ll need any today.
There’s nothing worse than having to watch puppies (or babies) face big scary needles.
I’m sure that she’ll be a big girl though no matter what they do to her, and I’ll survive the trauma as well.
I know this sounds horrible, but I have no problem watching movies where humans get shot or injured. However, I absolutely cannot watch a movie where an animal might get lost, upset, or killed.
So, I’m basically telling you that I can watch all of The Godfather movies, but I cannot watch Babe.
Is that weird?
Before you answer that, I’ll just change the topic…
I’ve learned how to work around my dairy intolerance pretty well over the years (to see how, you can check out my A Dairy Free Life series). I mean, it isn’t a horrible curse that causes me to cry whenever I drive past a Dairy Queen. In fact, I really don’t crave dairy products that much anyway.
When a craving for dairy does happen to strike though, I do one of three things:
- Ignore it since I know eating dairy will make me sick.
- I give into it- and then I get sick.
- I make a dairy-laden meal for Michael and live vicariously through him and his strong stomach.
Last night, I went for the third option and made homemade macaroni and cheese following a recipe from Gina’s Skinny Recipes.
Even though I followed the recipe almost exactly, I made a few minor substitutions, such as using Earth Balance instead of regular butter, almond milk rather than regular milk, whole wheat flour instead of regular flour, and Panko bread crumbs instead of regular bread crumbs.
I’d be lying if I said that I didn’t take a small taste (for quality assurance purposes only, of course), and it came out really well.
Let’s just hope that I don’t get sick!
Speaking of getting sick, if I can find a dairy-free brand of cheese that isn’t completely nauseating, I’d like to use it as a replacement for cheese in this recipe sometime (although I am not sure if I can tell Michael that it isn’t real cheese without making him sick to his stomach!).
Any dairy-free or vegan cheese suggestions? I’ve tried a few that were soy based and just didn’t care for them (or the consistency).
