Nursery progress & my go-to healthy lunch
A few weeks ago, I shared some “before” pictures of the nursery (and all its pirate-themed glory).
My dad slaved away for several days taking down the wallpaper- which was anything but easy. The paper left behind some nasty glue residue, and despite the fact that he’s done this sort of thing before, he just couldn’t get the glue to come off the walls.
Even the folks at Benjamin Moore told him it would be darn near impossible, so we agreed to bring in a professional to finish the job.
My poor father was really disappointed because he wanted to complete the room for his grandson, but I think he did a wonderful job and really appreciate how hard he worked. After all, there aren’t any pirates in the room now!

Luckily, Michael has a friend who just so happens to be a painter, and he is going to take it from here.
While we’re on the subject of the nursery, I made one nursery-related purchase recently.
A honey-bear mobile for the crib!
I thought about special ordering a mobile with Lionel Richie’s head floating around but decided that floating heads might not be too baby-friendly.
(Totally just kidding, by the way. Even I am not that obsessed with good old Lionel!)
And last night, Michael and I picked out the wall art from Etsy. It should be here in a few days, and of course, I’ll share it with you when it arrives.
Now onto the subject of food…
My sister and I went to Le Peep for breakfast yesterday, and I was so wrapped up in talking and catching up that I completely forgot to take any pictures.
We both ordered these really light egg white omelets made with chicken, veggies, and avocado called White Lightning. You’ll have to use your imaginations!
Which reminds me of this…
You most likely have to be a blogger to find that entertaining.
Anyway, I told my sister that since I forgot to take photos we will just have to go back very soon!
I did manage to take a picture of my lunch though. I’ve basically been eating this for the past few weeks, and I am still not even remotely tired of it.
It’s just two slices of Trader Joe’s sprouted rye bed (toasted) with some mashed avocado, tomato slices (probably the culprit for my horrible heartburn), and a sprinkling of sea salt. Sometimes I like to add some sliced onion as well.
I’ll either do a salad, mixed veggies, or a piece of fruit on the side.
I swear, the sprouted rye bread (and probably the avocado) is what makes this taste so good. If you live near a Trader Joe’s, I highly suggest picking up a loaf. Just be sure to keep it in the fridge. Since it is sprouted, it tends to get moldy very quickly when left out.
It’s the perfect healthy and quick lunch!

Ughh, that wallpaper glue is HORRIBLE to get off walls. My bathroom still sports some rough spots where we just painted over it. I’m much too cheap to hire a professional.
I swear that my dad tried EVERYTHING to get that stuff off. It just didn’t want to budge!
How disappointing for your dad, but so sweet that he wanted to do that for your and his upcoming grandbaby.
