Hello, third trimester & homemade peach cobbler recipe

 

Guess what?

Today marks the first day of my third trimester!

I cannot believe that our baby boy will be here in just three short months.  Of course, it isn’t too difficult to believe when I look down at my belly.

 

 

I’m happy to say that I am still feeling really good and have a fair amount of energy.  And I am still craving Subway nearly every single day, of course.  ;)

Speaking of food…

Over the weekend, Michael kept talking about how much he loves peach cobbler.  I’m not sure if he was throwing me a hint, but if he was, I certainly caught it.

Yesterday afternoon, I made peach cobbler (or any kind of cobbler, actually) for the very first time.  It was surprisingly easy, but even so, I was pretty proud of myself.

 

 

Peach Cobbler

(serves 4)

1/4 cup Earth Balance butter (or any kind of butter you prefer), melted
1/2 cup flour
1 teaspoon baking powder
1/2 cup pure cane sugar
pinch of sea salt
1/2 cup unsweetened vanilla almond milk
1/2 teaspoon almond extract
1/4 teaspoon ground cinnamon
2 cups fresh peaches and their juice, sliced

Preheat oven to 400°F.

Pour melted butter into a baking dish (approximately 9 inches). 

In a medium bowl, stir flour, baking powder, sugar and salt and then add in the milk and almond extract.  Once combined, pour the batter over the butter in the baking dish.   Spoon the fruit and the juice over the batter.

Bake in the preheated oven for 35 minutes (or until batter rises to the top and the top is slightly golden). 

 

 

This was the perfect way to utilize those fresh peaches from the farmers market.  Too bad we didn’t have vanilla ice cream in the house.  I’m sure my hubby would have liked that little touch!

In any case, Michael declared his love for my cobbler on Facebook last night.  Clearly, my cobbler is serious business if it can makes it’s way into a Facebook status. ;)

  1. Oh, you’re speaking my language! There’s nothing better than peach cobbler, that is, unless it’s peach berry cobbler. And it is my very favorite way to eat peaches. But really, is there a bad way to eat a peach?

    That peach cobbler looks amazing. I’m going to try your recipe this week! I never ate a lot of peaches until becoming pregnant, now I absolutely must have them in the house at all times. Also? I’ve tried peach cobbler (or pie, for that matter,) but it looks delicious.
