Part one: Weekend recap (celebrating & Saluda)
Last week, I confessed that I’ve been kind of an emotional wreck lately.
(By the way, thank you so much for the sweet and helpful comments and emails. You always make me feel better!)
In light of my hormone-induced feelings, Michael promised to make the weekend special- and it was definitely special indeed.
On Saturday, we ran some errands before heading off to a “goodbye, summer/hello, fall” party at my mom and dad’s house.
The food was delicious and included burgers, barbecue, hot dogs, coleslaw, potato salad, salad with mixed greens, fruit, and guacamole…among many other yummy things.
For the party, I made apple pie dip and tortilla chips. I followed the recipe exactly, but I did substitute almond meal for flour when I made the dip.
My friend Jenny made a similar dish for my baby shower, and we all loved it so much that I thought it would be perfect for Saturday.
It seemed to be a big hit!
Of course, it couldn’t compare to the beautiful sheet cake. The cake was so pretty that it almost felt like a shame to cut it.
Great food. Great people. You can’t beat that kind of a night!
Sunday was one of the very best days I’ve had in awhile.
Michael and I drove to the mountains and stopped off for lunch in a little town called Saluda.
We were hoping to eat at a restaurant called The Purple Onion (which we’ve been to before and loved), but sadly, it was closed.
Luckily, we found another restaurant just a few doors down called Saluda Grade Cafe that was just as good.
We both ordered Greek salads with chicken- only I had mine blackened- and enjoyed them very much.
After lunch, we headed off to Hendersonville, North Carolina to partake in one of my very favorite activities…
