Lunchtime check-in (soup & salad)

Happy Thursday!

It is absolutely gorgeous outside today here in Charlotte, so I took the baby for a nice pre-lunch walk.

He smiled at me the entire time we were walking, and just as we were about to approach our street, he feel fast asleep.

I’d definitely call that the perfect walk!

Today’s lunch was pretty yummy, so I thought that I’d do a little lunchtime check-in.

I made up a salad consisting of romaine lettuce, sweet potato, beets. baby bella mushrooms, walnuts, onions, and vegan mozzarella cheese by Galaxy Nutritional Foods.

The salad was drizzled with some homemade creamy balsamic dressing.  You should definitely make the dressing as well.  It’s delicious!

I also had some organic butternut squash soup from Trader Joe’s.  If you’ve read or watched any of my Trader Joe’s hauls, you know the soup is a favorite of mine.  I’ve actually been obsessed with it for months!

    Dinner is always a plate full of salad ( with teamtoos, or almonds, or sunflower seeds, or grated cheese, or craisins, or pears, or apples, or peas, or cucumbers, or peppers)with a side of some main course item like chilli, grilled chicken, whole grain pasta, stuffed peppers, chicken noodle soup, rice pilaf, or lots of steamed veggies. I make my own dressings with extra virgin olive oil, flax oil, and sometimes buttermilk and sourcream. One snack/lunch/dinner I love is wheat sourdough bread (if I can find it!) drizzled with extra virgin olive oil and McCormick Herb Garden sprinkled on it. I make a green smoothie every day. There are a zillion recipes for green smoothie, but here is the basic formula I use.2 cups wateradd romaine, or spinach, or chard, or kale, or collards and pulse, keep adding until blender is at 2 1/2 cup line.blend 2 minutes on high.Then add a banana and 3-4 servings of fruit.blend 2 minutes on high.if additional sweetener happens to be needed use about 4 stevia drops, more banana, or more fruit.My favorite is spinach and banana and pear.

  2. Haha, he’s so cute :) I had leftover mexican stuffed pepper and may have snagged a cupcake from our breakroom after hearing there was dessert down there!

    Yay for beans and rice! Last night I made some tasty grub here’s the recipe:1 med onion, cohpped4 cloves garlic, minced2 T olive oil2 cups black beans (soaked, cooked, ready to go or 1 can)1 can stewed tomatoes2 cups hot cooked brown riceSaute onion and garlic til tender. Add drained beans, undrained tomatoes (and if you want some spice, some ground red pepper). Bring to boil; reduce heat. Simmer, uncovered, 15 mins.Serve on top of rice. I also recommend adding some corn, salsa, and maybe some sour cream. Delish, easy, cheap, easy to double.
