Lunchtime check-in (Salmon strawberry poppy seed salad)

Happy Tuesday!

As you can tell by the title of this post, I’m going to do another lunchtime check-in today.

If I’m going to be perfectly honest, this was actually yesterday’s lunch.

Since my blog was out of commission at lunchtime yesterday, I didn’t get to share it with you, but it was just so delicious that I simply had to post it today.

Lunch was a salad consisting of:

  • Baby spinach
  • Sliced strawberries
  • Sweet onions
  • Sliced baby bella mushrooms
  • Dijon herb salmon (leftover from the previous night)
  • Panera poppy seed dressing (I love that it is sold in stores now!)

I’m kind of sad that I don’t have any more salmon because this would have been the perfect lunch for today- especially with a little bowl of soup.

It’s a rainy gloomy day here in Charlotte, but I have some fun afternoon plans with my family since MT is off from work.  I’ll recap for you tomorrow!

  1. I have just been buring the calories and losing body weight/fat lately, so just starving some days. I made a brown rice pasta salad with veggies for lunch today (loving pasta made out of brown rice lately). After this post, I am going to get some salmon to add to my lunches too – YUM:) Happy Tuesday

    • Happy Tuesday to you too! Brown rice pasta salad sounds delicious! I’ve actually been craving pasta a lot lately. We had quinoa pasta last week, and it was so good.
