Recipe: Lemon butter salmon with kale mixture

On Saturday night, I was struck hard by pregnancy insomnia.  My inability to sleep might also have been the unpleasant consequence of consuming caffeine for the first time in nearly 9 months.  In any case, I woke up wide awake at about 1:30 am and never fell back to sleep.

I considered taking a shower.  I almost cleaned my closet.  I thought about all of the non-maternity clothes that I’d soon get to wear.  I wondered what our baby girl will look like.  And my mind also turned to what I was going to have for dinner that evening.

As you all know, I always have salmon on Sunday nights, and as I was laying in bed, I decided to prepare it the following way.  It’s nothing revolutionary or complex.  However, salmon tastes completely delicious when made this way, and I just had to encourage you to make it.

Lemon butter salmon with kale mixture

Serves 2

Ingredients (for the salmon)

  • 2 4-ounce Atlantic salmon fillets
  • 2 teaspoons of melted Earth Balance butter (or butter of choice)
  • 1 clove of finely sliced garlic
  • 1 tablespoon of lemon juice
  • 1/4 teaspoon of dill
  • 1/4 teaspoon ground pepper

Preheat your oven to 400 degrees.  Line a baking sheet with foil.  In a small bowl, whisk together the melted butter, garlic, and lemon juice.  Coat each piece of salmon evenly with the mixture.  Season with the pepper and dill.  Bake for approximately 14 minutes or until the center is opaque. 

Ingredients (for the kale mixture)

  • 1/2 tablespoon of Earth Balance butter (or butter of choice)
  • 1 clove of finely sliced garlic
  • 1 tablespoon of lemon juice
  • 1/4 cup diced red bell pepper
  • 1/2 chopped yellow onion
  • 3 cups of kale (washed and chopped into small pieces with stems removed)
Heat butter in a large saucepan over medium-high heat. Add the garlic, onion, and peppers and cook until soft (but not colored). Raise the heat to high and add the kale.  Toss to combine.  Cover and cook for about 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste (optional) and add the lemon juice. Divide the mixture onto two plates alongside the salmon.  Enjoy!
