A dinner Peter Brady would like

Whenever I think of pork chops,  I’m reminded of “The Brady Bunch” and the character of Peter Brady.

If you have no clue what I am talking about, you must watch this clip.

I must be delirious because I cracked up so hard watching this video.  I hadn’t seen it in years!

If you haven’t already figured it out, I made pork chops for dinner the other night (thanks to another great recipe from Eating Well).  It had been awhile since I’ve made them, and I figured I’d give Michael a break from chicken and fish and make them for him.

He absolutely loved this lightened up recipe and happily enjoyed the leftovers the very next evening.

 

 

Believe it or not, pork is actually pretty lean and contains protein, iron, vitamins B-6 and B-12, niacin, riboflavin, potassium and thiamine.

Even though I don’t eat pork, I still enjoyed this meal by pouring the apple and onion mixture over lots of fluffy quinoa.  It was delicious!

I’ve found that making my meals vegetarian (and sometimes vegan) has been pretty simple. It just requires a little creativity, and I’m really enjoying the substitutions.

Did anyone else watch The Brady Bunch as a child?  Even though the show originally aired a decade before I was born, I watched the reruns growing up.  I always wanted Marcia’s hair.  And I thought that Greg was creepy.  I still think that, actually.

  2. haaa! I say “poak chawps and applesaaawwwse” all the time! 🙂 yep, I definitely grew up watching The Bradys. another one I use a lot? “something suddenly came up” 😉

    and the apple / onion mixture over some quinoa would be perfect for me, also!
