The Kind Diet & squash recipe

Happy Wednesday!

On Monday night, I spent spent quite awhile browsing through The Kind Diet by Alicia Silverstone.

Even though I am not vegan, I love vegan recipes and think that this book is very beautifully written and captivating.

Being that Michael had another business dinner last night, I was on my own and decided to make Alicia’s butternut squash recipe (because it is orange, of course).

Squash ‘n’ Onions

(Adapted from The Kind Diet)

Ingredients
1 medium butternut squash
2 medium onions
1 tablespoon olive oil
1/2 teaspoon dried oregano
1/4 teaspoon sea salt

Peel the squash and cute into 2″ pieces.  Halve the onions lengthwise and slice crosswise into 1/2″ slices.  Heat the oil in a saucepan.  Add the onions and saute until transparent (about 5 minutes).  Add the squash and oregano.  Saute for another 2-3 minutes.  Add 1/2 cup water to the pan and the salt.  Cover pan, reduce hear to low, and simmer for about 25 minutes.

This serves 4, but I halved the recipe when I made it for myself and saved the rest for lunch tomorrow.  Yay for leftovers!

When I finished eating dinner, I picked the book back up and stumbled on a recipe for hot chocolate.  Score!

I made several modifications based on what I had in the house, and it was really good.

Hot Chocolate

Ingredients
1 cup almond milk
2 teaspoons unsweetened cocoa powder
1/4 teaspoon vanilla extract
1 teaspoon maple syrup

Whisk all ingredients together in a small saucepan.  Place over medium heat and cook until its hot enough for you!

I was also lucky enough to catch up over the phone with my wonderful friend Michelle.  We’ve been friends since the second grade!

I’ll thank Alicia for my lovely evening.  You just have to love Cher Horowitz.

  1. I haven’t read it but sort of wanted to. I like Alicia Silverstone, Clueless!, but I heard the recipes had a lot of obscure ingredients. Would you agree?

    • She DEFINITELY uses some off ingredients that I’ve never heard of. I should have mentioned that in my post! There are several recipes that I had to skip over altogether for that very reason.

    I purchased The Kind Diet this summer and loved it! I haven’t really tried any of the recipes yet, but love the info. It was after reading The Kind Diet that I became a vegetarian. 🙂

    • I definitely found it to be inspiring. I love my steak too much to ever really be a vegetarian BUT I have since incorporated veg meals a few nights a week. 🙂

  4. i haven’t read the book yet, but i love Alicia’s blog. (she’s such a sweetie.) i’m not technically vegan, but we rarely eat dairy so vegan cook books really help us out. looking forward to reading more of your blog! 🙂

  5. I haven’t read the whole book, but I love Alicia’s blog, too! I’ve only made her vegan “Reese’s” peanut butter cups so far, but they weren’t really my favorite recipe… and not really much healthier when you consider all the vegan margarine and sugar in there. I am intrigued by vegan recipes, but I prefer the ones that use all-natural ingredients, rather than soy substitutes– like that butternut squash recipe you made!! Looks delicious!

    I’m currently reading Crazy Sexy Diet, and am loving all the vegan info in there, too! 😀
