I’m a big fan of getting mail (with the obvious exception of bills), shopping (even at the hardware store), and healthy eating (which you already know).  So, when the opportunity rolled around to sample NatureBox, a subscription service that combines all three of those things, I was immediately sold. NatureBox delivers a world of carefully sourced and nutritionist-approved foods right to your door.   Each snack contains wholesome ingredients – with no artificial sweeteners, flavors or colors. What I Ate Wednesday (WIAW)

What I Ate Wednesday (WIAW)

Happy Wednesday! Well, it has taken me 3 1/2 years, but I am partaking in my very first What I Ate Wednesday today. Being that it is only mid-day, this is obviously what I ate yesterday, but you get the picture.   1.  For breakfast, I had a protein pancake topped with organic pure maple syrup, strawberries, and blueberries.  I also had some decaf coffee with almond milk and cinnamon and a huge glass of water with lemon. 2.  Lunch was a wrap on a whole grain tortilla and filled with grilled chicken, avocado, tomato, onion, and...

Lunch time check-in (delicious salmon recipe)

Lunch time check-in (delicious salmon recipe)

Happy Monday! I’m trying to eat my lunch at the moment, but I am shaking like a leaf because Michael (whose mattress is as low as it can possibly go) just fell out of his crib.   I heard a big thud from upstairs and found him flat on his back in front of his crib.  Because he didn’t cry, I was terrified, but as soon as he saw me, the tears came, and he was fine.  I think the whole ordeal just shook him up a bit, but it probably scared me more than it did him! What I’ve been eating lately: Quick & easy wrap

What I’ve been eating lately: Quick & easy wrap

My sister Melissa is a teacher, and since the summer will be over before we know it, I’ve been trying to spend as much time with her as possible.  That means, play dates, TCBY, coffee at Starbucks, and lunch together at my house last week. All I do is fill one whole wheat tortilla with a MorningStar Farms Garden Veggie Patty, some romaine lettuce, sliced tomato,...

6 websites for healthy recipes

6 websites for healthy recipes

Flipping through cookbooks is one of my favorite things to do.  I just love looking at all of the beautiful pictures and putting sticky notes on the pages with recipes that I want to try.  I have a really nice collection of cookbooks in my kitchen, and I cherish all of them. But sometimes it is just way easier to type “healthy pasta recipes” into Google and call it a day.  The experience of picking out a recipe might not be as much fun, but over the years, I have discovered many websites that come pretty close. Here are my top 5...

Trader Joe’s haul (May 2014)

Trader Joe’s haul (May 2014)

On Sunday morning, my husband gave me an amazing gift- the joy of grocery shopping without children! Don’t me wrong- I enjoy the company of my little ones more than anything, but let’s face it, they do not make it easy or enjoyable to shop. I saw it as the perfect opportunity to  head off to Trader Joe’s, and I stocked up on some weekly staples and long-time favorites. Honey whole wheat bread (for MT’s lunches) Sprouted rye & wheat bread (my all-time favorite!) Bananas Fire roasted red and yellow peppers Baby bella...
