Easy fall dessert (the baking continues)
I’m bored. Completely and utterly bored out of my mind. I feel like I’ve been stuck in the house for weeks just waiting for this baby, who is supposedly arriving early, to actually make his grand entrance into the world. Apparently, boredom leads to baking in my household. As you know, I baked cookies (twice) this week, and yesterday afternoon, I baked again. I must say, I’m pretty proud of this dessert and even though it isn’t the healthiest thing in the entire world, I didn’t want to keep it all to...

Up until Sunday evening, it had been a while since I had any pregnancy-induced cravings… And then I got a major craving for oatmeal cookies. I publicly vowed (well, to all of my Facebook friends anyway) to make homemade oatmeal raisin cookies on Monday morning. Since I try to be a very thoughtful wife, I went to the store and got all of the necessary ingredients to make gluten-free cookies, so Michael could enjoy them as well. As soon as I got home, I went to work on the cookies and patiently waited for the timer to ring. (In...

Guess what? Today marks the first day of my third trimester! I cannot believe that our baby boy will be here in just three short months. Of course, it isn’t too difficult to believe when I look down at my belly. I’m happy to say that I am still feeling really good and have a fair amount of energy. And I am still craving Subway nearly every single day, of course. Speaking of food… Over the weekend, Michael kept talking about how much he loves peach cobbler. I’m not sure if he was throwing...

Michael thanks you for all of the happy birthday wishes. I have the best readers! When I asked him what he wanted to do for his special day, I was pretty excited that he wanted to have dinner at home. For starters, we’ve been going out way too much lately, and I just wanted a healthy home cooked meal. For another thing, celebrating at home meant that I could go all out and make it a fun evening for him. I get so excited about other people’s birthdays! The birthday boy requested Chicken Marsala for dinner, so I happily...

Over the weekend, Michael and I went to the Strawberry Festival in Fort Mill. It was great to see so many people out and about on such a beautiful day. There were some vendors selling jewelry, clothing, and baked goods. There were also bouncy castles, face painters, a REALLY scary clown, and a petting zoo. But I was most interested in strawberries. Unfortunately, I didn’t realize that it actually isn’t all that easy find strawberries at a Strawberry Festival. We wandered around looking for a booth that was selling them, and...

Michael and I are very fortunate to live near both of our mothers. Even though we see them often, we decided to host a Mother’s Day lunch at our house yesterday to show just how much we appreciate them. When they arrived, both moms received gift baskets with all of their favorite snacks. My mom’s basket included packets of Justin’s Nut Butter, The Ginger People Ginger Chews, a jar of my homemade granola, pistachio nuts, organic dark chocolate, and a few other fun things. Like mother, like daughter! There were a total...
