Easy Breakfast Cups

There are few things that I love more than easy recipes consisting of just a few simple ingredients (with the exception of my husband, dog, family, and Lionel Richie music, of course).

Well, the other day I made a breakfast that only involved four ingredients. It was a breeze!

I did serve it with home fries though, so I felt like I was doing at least some work.  😉


Easy Breakfast Cups

This recipe is based off one found in my Trader Joe’s Cookbook.  You can get creative and use any kind of cheese, add more vegetables, or even salsa instead of pesto.  Enjoy! 

Serves 2

Prep time: 15 minutes
Cook time: 20 minutes

2 ramekins greased with olive oil (you can also use a muffin tin)
2 slices of low-sodium ham (or 2 slices of whole grain bread with the crusts removed)
3 tablespoons pesto, divided (I used Trader Joe’s Pesto alla Genovese, a basil pesto)
1/4 cup goat cheese
2 whole large eggs
salt and pepper, to taste (optional)

Preheat your oven to 400 degrees F.  Take the oiled ramekins and fit one slice of ham (or bread) in each to form a cup.  Add about 1 1/2 tablespoons of pesto and evenly divide the cheese into both cups.  Break an egg on top of each one and bake until set (about 20 minutes).  Season with salt and pepper, if using.



They are kind of cute, aren’t they?  These would also be great for serving at a brunch.  Next time, I think that I’ll squeeze in some vegetables!

  4. I love easy egg dishes, especially when you have company and want to get a little fancy. We are going to a wine event on Saturday – 1st time so hoping for some great wines to taste. My asthma has been kicking in lately, so have not been feeling well either – too much more of this and will have to go on steroids again – YUCK:( Have a Great Weekend and Take Care – Enjoy the Mountains!
