Easy fall dessert (the baking continues)


I’m bored.

Completely and utterly bored out of my mind.

I feel like I’ve been stuck in the house for weeks just waiting for this baby, who is supposedly arriving early, to actually make his grand entrance into the world.

Apparently, boredom leads to baking in my household.

As you know, I baked cookies (twice) this week, and yesterday afternoon, I baked again.  I must say, I’m pretty proud of this dessert and even though it isn’t the healthiest thing in the entire world, I didn’t want to keep it all to myself.



Apple Cranberry Casserole

(serves 6)

3 apples of your choice, cored and chopped (I used Empire because that’s what I had on hand)
1 cup fresh cranberries
1/2 cup pure cane sugar
1/2 teaspoon ground cinnamon
4 tablespoons butter (I used Earth Balance)
1/2 cup almond flour (but any kind of four would work)
1/2 cup light brown sugar

Preheat your oven to 350 degrees.

Combine the apples and cranberries into a large bowl.  Add the sugar and cinnamon and toss to coat. 

In a separate bowl, add the butter, flour, and brown sugar.  Mix everything together until crumbly. 

Pour the mixture apple and cranberry mixture into an 8×8 casserole dish or deep baking pan that has been sprayed with cooking spray or lightly buttered.   Pour the brown sugar mixture evenly on top of the fruit.

Cover and bake for approximately 50 minutes.



This dessert is awesome and perfect for this time of the year.  I’m actually going to make it again at Thanksgiving because I know that my family will love it.  Michael certainly did!

It tastes great warm or cold and would probably be the best with some vanilla ice cream. 😉

Time for me to find a way to alleviate this stir-crazy feeling.  I cannot handle another movie marathon, and sitting around waiting to pop is just going to make me slowly go insane!

  1. Oooh shoot, this looks good. Honestly, there’s this sandwich at a bakery/cafe by me that sautees cranberries with orange juice and then puts them on a turkey and provolone sandwich. It’s aaaaaweeeeeeeesome.

    Start going for walks if you can – helps pass the time and feels like you’re doing something productive to kickstart labor, whether it’s true or not 🙂 Wish I had more advice to offer but I wallowed in my sad boredom for days/weeks so I know how you feel! It’s almost over though, even if you do go past your date!
