Friday night meals


When I’m menu planning for the week, I always match the dish to the day of the week.  Saturday meals need to be fancier, for instance (I have a good one to share with you this week, actually).

Then there are certain foods that just scream, “Friday!” to me. Pizza, homemade “takeout”, and tacos are among these foods.

This past Friday, I made healthy soft-shelled chicken tacos- totally appropriate for the day of the week.


Chicken Tacos

(Inspired by The Food You Crave)

Serves 6

Prep time: 20  minutes
Cook time: 15 minutes

1 tablespoon olive oil
1/4 teaspoon cayenne pepper
1 tablespoon Tabasco sauce
2 cloves, garlic, minced
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 pound lean chicken breast, cut into strips
3 cups coleslaw mix or shredded cabbage
1/2 cup chopped fresh cilantro
12 small whole wheat tortillas


For the salsa:

1 medium English cucumber, diced
2 medium avocados, peeled, pitted, and diced
1/2 red onion, diced
Juice of 2 limes
Salt, to taste
1/4 cup chopped fresh cilantro


Coat a large skillet with olive oil and place over medium-high heat.

Combine cayenne, Tabasco, garlic, cinnamon, and salt in a small bowl.  Toss the chicken strips in the mixture to coat. Place the chicken in the skillet and cook for about 5 minutes on each side, or until lightly browned.

Combine all of the ingredients for the salsa in a medium bowl and serve within an hour of preparing, to keep avocado from browning.

Warm the tortillas in the microwave for 45 seconds by placing in between two damp paper towels.

Place the chicken, coleslaw mix or cabbage, cilantro, and salsa in serving dishes for making the tacos.


If you’re a vegetarian or vegan, you may want to substitute black beans for the chicken.  I’m sure it would taste delicious!

Do you serve certain meals on specific days of the week?  Pasta is also another dish that I typically serve on Fridays, unless it is a more complex recipe- then it is a Saturday meal.

  1. Pizza is definitely a Friday night meal! I save more involved recipes for the weekends and try to stick to a few easy meals during the week. Pasta and tacos are great go to meals!

  2. When I was still living at home, my mom invented the “Sweet Thursday” – at this day, we would have sweet things, e.g. pancakes, rice pudding, etc. for lunch.

    We loved it – and it was a once-in-a-week experience, therefore alright. 😉

      What an adorable, wonderful idea! It is fun to have little weekly traditions. Michael and I have a Sunday night tradition where we cook steak or fish, have wine, and then watch a movie with popcorn. It’s awesome. 🙂

  3. These look great! We usually eat out on Saturdays. So I save my more complicated meals for Sunday- since Jeff doesn’t eat with me Mon-Thurs.

      Even though we eat together most nights, Sunday nights are our special nights too. 🙂

  4. Sundays are usually smoked meat dinners. Mondays and Wednesdays are usually Leftovers dinners – gym nights. I throw in some stirfrys, pasta, tacos, burgers or pizza in as fillers. We are taking a cooking class this week to get re-energized about cooking and look at some healthier options.

  5. I know exactly what you mean about meal planning! I think it makes it a lot more fun to have pizza night Fridays or fancy Saturdays. I’m like Jen, my hubby and I usually go out Saturday night and then will eat our leftovers for Sunday lunch. 🙂 This meal looks delicious!
