Lunchtime check-in (Collard wraps with chicken & hummus)

I tend to be a creature of habit when it comes to breakfast and lunch.  However, I actually ventured out of my comfort zone today and had something for lunch that I have never shared before in a meal time check-in.

These moments don’t happen often, so I figured that today’s lunch was worth documenting.

Collard wraps with chicken & hummus

First, I baked a chicken breast in the oven.  While I waited for that to finish cooking, I took two collard greens and filled them with some sliced tomato, roasted red pepper hummus, mushrooms, and onion.  After my chicken cooled off a tiny bit, I cut it into slices and divided it between the two greens before rolling them both up to make wraps.

I also had some apple slices on the side (which a certain toddler kept stealing off my plate despite the fact that he had some on his own plate).

This lunch is quick, easy, and filling…which means that I’ll probably be making it consistently for the next few months.  So much for creativity. 😉

  1. Ah, I wish I’d seen this idea a couple weeks ago! I had a giant bundle of collards in my CSA box and didn’t know what to do with them so I mostly fed them to my rabbit! Ooops!

    • If you get them again, you NEED to try this! I love using collards as wraps, and it is actually what I did for lunch again today. 🙂
