My Favorite After Dinner Snacks

I’m a big fan of Lionel Richie.

And I am also a big fan of eating.  My body cannot tolerate large meals though, so I usually have smaller meals and a few snacks each day.

In the evenings, I always have a snack about 1-2 hours after dinner.  Always.

Because the snacks are both small and healthy, I don’t feel the least bit guilty about treating myself to one each night.



My Favorite After Dinner Snacks


  • Pumpkin Latte: I make this “latte” by combining 1 cup unsweetened vanilla almond milk, 1/4 teaspoon pumpkin pie spice, a dash of cinnamon, and some stevia.  I either heat the mixture in a microwavable mug or in a saucepan.  I’ll drink this pretty much every night during the winter months.  And sometimes in the summer when the air-conditioning turns me into an ice cube.
  • Popcorn:  When Michael and I watch a movie together on the weekends, my big indulgence is buttery popcorn.  However, I try to be healthier during the week, so I’ll snack on air-popped popcorn sprinkled with some sea salt and nutritional yeast.  When I’m also craving something sweet, I’ll add some cinnamon instead of the nutritional yeast.  It’s really good!
  • Mini Larabars: I love Larabars, but a whole one is just too heavy to eat as an afternoon snack.  This is why I love having mini Larabars in the house.  If don’t have any, I’ll just split a whole one in two and eat one half.
  • Endangered Species Dark Chocolate:  Just 1-2 squares of this chocolate, made from 88% cocoa, makes me a happy girl.  Some red wine to go along with it, doesn’t hurt either.

  1. I’m the kind of person who always wants “dessert” so I usually have something sweet at night like ice cream, froyo, or an ice cream bar! So healthy..
