Quick & Easy Roasted Veggies with Tempeh and Quinoa

Maybe it is pregnancy brain- or maybe it’s just my natural way- but I’ve been both a mental and physical hazard lately.

Allow me to explain some of the bonehead things I’ve done lately…

  • I’ve thought that it was Thursday everyday this week (at least I was right one time).
  • I started up my Vitamix before putting on the lid causing a major explosion (thank goodness it wasn’t completely filled up yet).
  • I ran my Keurig without putting a coffee mug under it first and obviously got coffee all over my kitchen counter (unfortunately, I was guilty of doing this way pre-pregnancy).
  • I contracted a lovely case of pink eye and have been wearing my glasses which I simple cannot see out of well due to the small lenses.  As a result, I’ve been walking into walls and tripping over my dog a lot (I spiced it up today and stepped on her tail instead).
  • I went to Walmart to get eye cleaner for my dog but couldn’t find it when I got home.  After spending 20 minutes looking for it, I concluded that I must have walked out of the store without the bag.  About an hour later, I remembered that it was in my purse the whole time, and I had told the cashier that I didn’t need a bag.
  • Speaking of finding things, I found my Us Weekly magazine in the pantry and my television remote in the fridge.  Pretty sure Michael wasn’t the one who put them there.
  • I’ve broken approximately 3-4 fragile items, have nearly fallen flat on my face in public more times than I can count, and I walk into a room in my house at least once a day and ask aloud, “Why did I come in here?”
  • I even sang the wrong lyrics to one of my favorite Lionel Richie songs, which clearly means that this is serious.

During this period of time, I’ve also felt like being in the kitchen cooking up new dishes.

Obviously, the kitchen isn’t really the safest place for someone who is forgetful, accident prone, and flighty, so I’ve been sticking to very simple meals.   For instance, I made this amazing recipe for Crock Pot Buffalo Chicken Wraps on Wednesday and roasted a chicken on Monday.

Last night, I just threw together a bunch of random items from the fridge and pantry since I knew that Michael would be home late.  I wasn’t expecting much of it to be honest, but it turned out absolutely delicious, so I figured that I’d share.


Please note: These measurements are just approximations.  Feel free to add more or less of something to suit your tastes.

Quick & Easy Roasted Veggies with Tempeh and Quinoa

Serves 1


1/2 cup quinoa, cooked
1/4 cup diced yellow onion
1/2 cup canned stewed tomatoes
4 ounces tempeh (cut into strips or cubes)
1/2 cup yellow bell pepper strips
1 cup butternut squash, cubed
1/4 cup baby carrots
2 teaspoons coconut oil
1 teaspoon raw honey

Preheat your oven to 400 degrees.  Cook the quinoa according to the package instructions.  Add tomatoes and set aside (covered).  Toss the onion, tempeh, bell pepper, baby carrots, and squash in coconut oil and honey.  Pour onto a baking sheet that has been coated with cooking spray.  Place in the oven for about 20 minutes or until veggies are soft and tender.  Mix quinoa and veggies together before transferring to a plate or bowl. 

When I was finished with this, I was actually wishing that I could eat it all over again.  That feeling isn’t too uncommon for me these days, but still… it was good.

Does anyone have fun plans for the weekend?  I’m going to see What to Expect When You’re Expecting with three other pregnant friends on Saturday (we should look pretty funny walking into the theater with our bumps), and on Sunday, we’re all going to a local baby fairIt will be a baby themed weekend for me!

  1. Totally feel you! Kevin was out of town the past two days, come home from work yesterday to our back door WIDE OPEN. Luckily, no one was inside, all belongings are accounted for, and Maggie was still there just sitting on the couch! I always let her out before leaving for work and I’m almost positive I didn’t leave with the door wide open. Very scary! Pregnancy brain is the worst.

      OMG! You are so lucky that it all turned out OK. That is way worse than anything I’ve done…so far. Haha.

  2. Have a Great Baby Filled Weekend! We are on hatch watch with Mama Quail and her 18 eggs in our backyard. I just want to soak up the rays and relax this weekend:) Again Here’s to a Great Weekend! You need a shirt with a hazard sign – poor thing – hang in there.

      I really do need a shirt like that! Right after I published this post, I made a green smoothie and then spilled it all over my kitchen floor. I’m a mess! I hope that you get in plenty of relaxation and that you have a wonderful weekend!
