Sesame Honey Tempeh

Thank you to everyone who commented with such wonderful words of encouragement regarding Michael’s switch to a dairy-free diet. So far, he’s doing great!ย  Then again, it has only been a day… ๐Ÿ˜‰

On another subject, I’ve been eating less meat lately, and I plan to share more about that tomorrow.

I’m pleased to report that as a replacement, I’ve really been enjoying tempeh.

Believe it or not, I tried it for the first time just a month or two ago.ย  Despite the fact that it looked similar to dog food (I know I’m not making an appetizing case), it was so good!

Since then, I’ve been enjoying it in sandwiches and on salads.ย  And last night, I made a really good salad with Sesame-Honey Tempeh.

Sesame-Honey Tempeh

(Lightly adapted from Eating Well)

Ingredients

1/2 tablespoon sesame oil
6-ounces tempeh, crumbled into bite-size pieces*
1 tablespoon honey
1 tablespoon reduced-sodium soy sauce
1 tablespoon water
1/2 teaspoon cornstarch

Heatย  oil in a large nonstick skillet over medium heat. Add tempeh and cook, stirring frequently, until beginning to brown, 7 to 9 minutes.
Combine honey, soy sauce, water and cornstarch in a small bowl. Add to the pan and cook, stirring, until the sauce has thickened and coats the tempeh, about 1 minute.

* You could probably substitute chicken or tofu for the tempeh as well.

The tempeh was topped on a bed of romaine lettuce with mushrooms, fresh corn (scraped off the cob), nutritional yeast, green peppers, tomato, cucumber, broccoli, avocado, and beets.

If you’ve never tried tempeh before, you really should give it a chance.ย  It tastes great, is high in protein, and it is pretty darn inexpensive.ย  All great reasons to try it!

  2. I’ve been cooking with tempeh more, too and really love it! I have a great recipe I’m going to share later this week!! ๐Ÿ™‚ The tempeh bacon is tasty, also – I like to cook it until it’s nice and crisp ๐Ÿ™‚
