Snack time check-in & we’re snowed in!

When you live in the south, snow days are obviously a pretty rare occurrence. A lot of the time, snow might be in the forecast, but it either never actually comes or it’s a really light dusting.  This time, we’re actually getting hit with it pretty hard, and the Governor told everyone to prepare to lose power once the ice hits.

I grew up in New York where the power lines were underground, so power loss is not something that I’m used to at all.  I’ve been preparing food all day, washing dishes, doing laundry, filling jugs of water, charging flashlights, and pulling out blankets just in case we’re literally left in the dark.

I’d hate to be powerless and snack-less, so I also made some kale chips this morning.  You’ll see that parts of them turned a bit brown, but that’s because I actually prefer mine a little crispy.

Kale Chips


2 bunches of kale
1 teaspoon of olive oil (The one that used actually contained garlic.)
1 teaspoon of nutritional yeast

Preheat the oven to 425 degrees.  Wash the kale and remove from the stalk.  Toss the kale and olive oil in a large bowl and place on a baking sheet.  Bake for about 10 minutes (keeping an eye on it to make sure it doesn’t burn).  Sprinkle with nutritional yeast once the kale has finished baking.


I love how easy kale chips are to make.  To be honest, I don’t make them terribly often because I always end up with little green pieces stuck in my teeth.  Those little babies are not easy to get out even with floss.  But I’m stuck inside for the next 24 hours (at least), so I can happily wander around my house with green specks in my teeth.  This is a judgement free zone!

Michael is really enjoying the snow day and is totally fascinated by all of the white flakes.

We played out there for a bit yesterday, and he had fun.  He doesn’t have gloves though, so we’re nice and cozy inside watching Mickey Mouse Clubhouse by the fire.

Making hot chocolate is the next item on my to-do list.  What’s a snow day without hot chocolate, right?

  2. Erin the weather has gone wacky. Live in the Sierras and have worn shorts the last 3 to 6 weekends – suppose to hit 70 here in the next few days too. Huh?!? I got my tan/burn on yesterday having my lunch outside. At least your little one gets to see snow:) Stay Warm and Be Safe!

  4. Kale chips rock! And those are all excellent disaster-preparedness things. Growing up in San Diego (where power, like water, has always been in short supply), I experienced a lot of black-outs as a kid. A few candles and some board games made it an adventure. Hopefully, though, with the temperature that low, you don’t have to experience it!

  5. Ya, Nia and I haven’t left the house today or yesterday either haha. It’s just too darn cold that it’s not worth it. Her little cheeks are already so dry and that’s with NOT going outside constantly!! I like staying home in pjs way better anyways!
