Swim lesson fail & the best thing I’ve eaten lately

A few weeks ago, I signed Michael up for swim lessons.

I know, I know.  He’s only 8 months old.  What could he possibly learn, right?

Well, I figured that it would be a great way to get him used to the water, and I also thought that it would be a fun activity to do together.  My friend Jen and her son are in the same class which also makes it social time for mommy!

Michael’s first lesson was yesterday, and long story short, we went to the wrong location.  By the time we got to where we were supposed to be, the lesson was practically over.

I was so bummed, but I spoke to the instructor, so she’d know that we still planned on attending (although she already had my money anyway and probably didn’t care!).

The next lesson is this Thursday, and hopefully, it will all go swimmingly. 😉

Moving on to a whole other topic…

Last week, I posted a photo of a quinoa dish that I had been loving a lot, and I promised to share the recipe.

Well, 100% of the credit for this one goes to Kelly of Eat Yourself Skinny who created this fabulous Summer Quinoa Salad.  When I made it, I actually mixed in some feta cheese to MT’s portion, and he liked it a lot. We also had some corn on the cob from the farmer’s market on the side, and as the title of the recipe implies, it was the perfect meal for this time of the year.

By the way, I made a huge batch the Friday before we went to the beach and took the leftovers with me.  They were absolutely perfect for an easy lunch!

  4. I can’t wait to see you tomorrow! I also think 8mos is the perfect age — W was kind of bored by the lesson yesterday b/c he’s already so used to the water. I wish I signed him up last year!
