The best thing I ate this week (banana chia seed muffins)

Up until recently, Michael would eat bananas like crazy. But like a typical toddler, he decided that bananas are scary and disgusting right after I made a grocery run and stocked us up on enough to feed all of the monkeys at our local zoo for a week.
Even though MT and I eat bananas daily, there was no way that we could finish them all off before they went bad. I’d normally bake banana bread with the ripe bananas, but I decided to make the Tone It Up banana chia breakfast muffins since I’ve had the recipe bookmarked for awhile.
I followed the recipe exactly, only I added the Greek yogurt to the muffins after I poured the batter into the muffin pan. This gave the muffins sort of a creamy filling.
It has been so convenient to have these on hand in the morning. All I have to do is pull one out of the fridge, pop it in the microwave for about twenty seconds, and add some strawberries on the side. MT has also been eating them and loves them with raw honey drizzled on top and some sliced bananas. I’m going to make another batch tomorrow (perfect for the snowy weather!) and probably freeze some of them for those mornings when I am in a rush and don’t have time to prepare breakfast for myself.
Believe it or not, these muffins are also really filling. On the first morning that I had one, I felt like I had a brick in my stomach! Needless to say, they kept me satisfied until lunchtime- no mid-morning snack required.
