The Granola Bar Monster Strikes Again

On Tuesday, I made Coconut Chocolate Chip granola bars.  I was so pleased with how they turned out that I made another batch of granola bars yesterday…

Banana Walnut Granola Bars!

The Coconut Chocolate Chip ones made my house smell like chocolate chip cookies.  And my latest batch made the house smell like banana bread.

These are worth making for the aroma alone!

Banana Walnut Granola Bars

(Make 12 bars)


1 cup rolled oats (or kamut flakes)
1/4 cup light brown sugar
1/2 cup chopped walnuts
1/4 teaspoon ground cinnamon
1/2 cup whole wheat flour
1/4 cup raisins,  optional (I didn’t have any on hand)
1/4 teaspoon salt
1/4 cup honey (agave or pure maple syrup would also work)
1 egg, beaten
1 ripe medium sized banana, mashed
1 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Generously grease a 9×13 inch baking pan.

In a large bowl, mix together the oats, brown sugar, walnuts, cinnamon, flour, raisins (if using) and salt. Pour in the honey, egg, mashed banana and vanilla. Mix well and pat the mixture evenly into the prepared pan.

Bake for 30 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

These are chewier than the others, but they are also crunchy.  I’m definitely a fan.

I’m really going to try to resist the urge to make more granola bars today, but we shall see… The possibilities are endless!
