Veggie Burger Lover

As you may already know, I’m not digging meat as much these days, and I’ve been exploring other options. Luckily, I have a very sweet and supportive husband who is willing to try some vegetarian meals with me.

I’ve been in the mood for veggie burgers lately, but I hate how so many contain soy (just not a huge fan) and a lot are pretty processed.  Rather than go with store bought, I decided to make my own.

They were a bit messy and elaborate to cook, but the results were well worth the effort.

Veggie Lover’s Burger

(Makes 4 servings)


1 teaspoon olive oil
1/2 small red onion, grated
1 clove crushed garlic
1 carrot, shredded
1/2 small summer squash, shredded
1/2 small zucchini, shredded
1/2 jalapeno pepper, diced
1/2 cup Baby Bella mushrooms, diced
1 stalk of celery, diced
3/4 cup rolled oats
1 Tablespoon nutritional yeast (optional)
1/2 egg, beaten
1-1/2 teaspoons soy sauce
1 teaspoon Worcestershire sauce
3/4 cup whole wheat flour

Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes or until tender. Chop the carrots, squash, zucchini, celery, mushroom, and pepper in a food processor.  You may have to add the vegetables gradually.  Mix them in with the garlic and onion.  Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, nutritional yeast, and egg. Stir in soy sauce and Worcestershire sauce.  Transfer the mixture to a bowl, and refrigerate 1 hour.

Place the flour on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the flour, lightly coating both sides.

Coat a skillet with cooking spray, and cook the patties over medium-high heat.  It should take about 5 minutes on each side.  Serve immediately.

My burger was served naked over salad greens and topped with tomato and avocado.

Michael’s burger was dressed up with Vegenaise, tomato, ketchup, and lettuce on a Trader Joe’s whole grain bun.

We also had my Roasted Russet Potato Fries which made my husband a very happy man.

It was the least that I could do though seeing as how he randomly sent me a dozen red roses earlier in the day.

I’m a very lucky woman! The flowers totally made my day…even more so than my visit to J. Crew. 😉

What is your favorite store bought brand of veggie burgers?  I need suggestions for less ambitious days. I like the ones Earth Fare makes, and I’ve heard great things about Trader Joe’s, but I have never tried them.

  1. These burgers look like they’re store-bought. Awesome job on making them look so pretty. I hope they tasted awesome too. My first attempt at a veggie burger, I used quinoa, it was good, but I might go the flour route next time, too!

  4. Wow! Those look awesome! In my neck of the woods there isn’t much variety so I’m afraid you probably don’t want to here that I usually eat the Morningstar Garden Veggie Patties. I do love Trader Joe’s meatless meatballs-they rock!

    I really like the Dr. Praeger’s California Veggie Burgers! They’re all natural, gluten free, and very yummy!
